Tall Horse Cabernet Sauvignon is a deliciously rich ruby-colored red with a layered bouquet of ripe forest berries and spice. It has a smooth entry with lovely ripe berry fruit and vanilla oak notes ending in a smooth finish. This wine’s grapes are left to ferment for seven days on their skins at 28 Degrees Celsius with three separate aerations per day. After the pressing process has been completed, the young wine goes through a process of malolactic fermentation on French oak staves, where they are left for an additional 3 months. Intrinsic cultivar traits are conserved by using a very light filtration process before the wine is bottled.
